What, in terms of proper use, is the difference between these two words?
Can they be used interchangably in certain situations or are the rules regarding their use rigid? Can anyone give me some examples/a rundown of the rules?

This is a disputed issue. Style guides say that "which" is for nonrestrictive clauses only. Linguists and other academics say that's an artificial distinction.

Just know that, if you're writing for a publication that follows Chicago style (like most books) or AP style (like most newspapers), this is considered a rule.

Per AP & Chicago:

Wrong: There's the car which I want.
Right: There's the car that I want.
Also okay -- "zero relative": There's the car I want.
