Can anyone recommend any first person POV fantasy novels or short stories? I'm considering working on one and would like to see some examples.

A different take on the Arthur legend was the trilogy by Bernard Cornwell: "The Winter King", "Enemy of God" and "Excalibur".

It is seen through the eyes of a foot-soldier in Arthur's army.
Perhaps a little more historical fiction than fantasy, but very well done and excellently written.

How could I forget about Harry?! One of my favorites! He writes in first person male. Can't wait for the next one in the series, and I even get to meet him at ButcherCon (his very first Harry-oriented conference) in October! 
Also, a new release is "Kitty and the Midnight Hour" by debut author Carrie Vaughn. It's first person female, and TERRIFIC!
Also, all of Laurell K. Hamilton's books (Anita Blake series and Merry Gentry series) are in first person female.

Steven Brust's Taltos books are first person, yes?
Follows the rise(s) and fall(s) of a witty assassin. Quite different and refreshing style, and the published order is out of linear chronology, so often earlier books plant a seed of intrigue in passing that is only explained in a later tale.

There are also the Amber series of books. I read all of those things. May God have mercy on my soul. I am not a big fan of the first person POV as far as reading goes. From a writing standpoint I can see some advantages.

I'm reading one right now, Urban Shaman, by C. E. Murphy (debut novel, BTW). First person, female. It's quite good. If you've read any of the Stephanie Plum novels by Janet Evanovich, the MC in Urban Shaman (Joanne Walker) is in that vein, although it's with a mix of Celtic and American Indian folkloric elements. Sounded a bit bizarre when I picked it up (it has fantastic cover art), but Ms. Murphy makes it work.

The Magic of Recluce by L.E. Modesitt. The Recluce sagas are outstanding, and at least two of them are first person, "Magic..." and, I believe, "The Death of Chaos". The ones with Lerris as the protagonist.
In the "better late than never" department... I'm finally reading the Farseer trilogy by Robin Hobb as Mac suggested. Good reads. Actually, I've been up until 2AM for the past couple of days reading these because I don't want to put them down.

I second, third, whatever Jim Butcher's stuff. He's full of win. Also Carrie Vaughn's Kitty series. Win, win, win.
John Levitt's "Dog Days" (he hangs around here as "rugcat")
Kim Harrison's Rachel Morgan series, first book is "Dead Witch Walking"
Karen Moning's "Darkfever" (this is shelved under Romance because her other books are Romance... but I would have shelved it as urban fantasy because plot does not revolve around a blooming relationship and no one has sex)
Kelley Armstrong's "Bitten"
Patricia Briggs's Mercy Thompson series, first book "Moon Called"
Kat Richardson's "Greywalker"
I could go on and on and on but unfortunately I'm at work and all my books are at home... will update some later though.

I believe Lisa Shearin's novels about Raine Benares are in first person. I have to admit I don't remember right off the bat, though. Also, Blood Magic by Matthew Cook is in first person and does some interesting things with tense (although I was only so-so about the story).
