Anyone have a good recipe for cookies I can cut?

I want to make gingerbread men for a party at school next week, but I thought it would probably be best to have more than one kind of cookie because not everyone likes gingerbread (myself included most of the time). I found an interesting looking recipe for the gingerbread, but I'm wondering about what other kinds I could use. I don't really like sugar cookies, so I'm hoping to avoid that. Any suggestions?

I had posted these on a previous thread here and they roll out very nicely - they are shortbread not a sugar cookie and some what plain, but they are one of my favourites. They are especially wonderful with a cup of tea and a good book!

Irish Shortbread

1 lb of butter
1 cup of brown sugar
2 tsp of good vanilla
pinch of baking soda
pinch of salt
4 cups of flour

Cream butter and sugar, add then the rest of the ingredients. Mix til smooth. Chill in fridge over night. Roll about 1/4 inch thick and cut into shapes and place on ungreased cookie sheet. Bake in preheated 350 oven for approximately 12 minutes.

Oh, and they make a lot but you can easily halve the recipe.

edited to add, the sitting in the fridge is to meld the flavours (and probably not crucial) but you will have to let it sit on the counter for a bit to make it soft enough to roll.

I made a batch of Appalachian Trail Cookies about a 1/2 hour ago. I've made them for snack day for the kids and left out the coconut. We've left out the peanuts, too, when dealing with food allergies.

I actually adore shortbread cookies, and they tend to go over very well in Japan because most cookies here aren't as sweet as in America. The only thing I worried about was whether or not they taste good with frosting because we're going to be decorating them as a project.

I've never decorated them but because they are not particularly sweet, I would think they would take some extra embellishment with no difficulties. Maybe make a small batch to see what you think?
