What's a good fantasy equivalent for "bitchy?" I can't come up with a substitute that has a similar connotation.

It's for a comedy/romance/action story.

Historically, "shrewish" comes close. From etymonline:
The meaning "peevish, malignant, clamorous, spiteful, vexatious, turbulent woman" [Johnson] is c.1386, from earlier sense of "spiteful person" (male or female), c.1250, traditionally said to derive from some supposed malignant influence of the animal, which was once believed to have a venomous bite and was held in superstitious dread. Shrewish "scolding" is from 1565, originally "wicked, evil" (1375).

The most common usage of "shrew" in this sense is arguably from The Taming of the Shew - Shakespeare's play about a feisty, bitchy woman. (I liked her better before she got 'tamed')

Also a "scold" is close too. In mediaeval times they might punish scolding women with a scold's bridle.

Feisty? Spiteful? Mean? Obnoxious? What about something that fits your worldbuilding, like "meaner than a mama dragon protecting her babes" or something?

And, just curious, what's wrong with bitchy? Presumably your characters are all speaking modern English anyway.

there are lots of old fashioned terms of abuse for assertive women.

Termagant, Shrew, Harridan, Virago are the few that I can remember offhand

For a fantasy, I like "shrew", as suggested by the poster above.
