Where is the most common stopover for a flight from Seattle to
London? Chicago or New York?

British Airways fly direct to Seattle
Just don't bet on your bags making it with you.

If I were you, I would go to Expedia or one of the other travel sites and search that route. That will give you a bunch of options to choose from depending on your characters' specific requirements. What's most important to them--a cheap flight? the quickest? most comfortable? Which class are they flying? Do they have a preference for a particular airline, based on safety record or frequent-flyer miles? Would a stopover in a particular city fit your plot better than another?

Best of luck with it!

There just has to BE a stopover. Every route has its key hubs and I didn't want to flub this one. It'd be as if someone had their character fly direct from Seattle to Florida with a stop in New Orleans; I'd be yelling, "No, sir! That flight hubs through Salt Lake City, or maybe Dallas but usually not."

I just checked Expedia and found 3 flights connecting through LA (which seems strange), 1 through Vancouver, 4 through Newark, 2 through Washington DC, 4 through JFK in New York. Or you can do the smart thing and go non-stop on British Airways.
