I understand that ensemble cast means stars have roughly the same amount of importance in a movie. Is there a different name for movies that have ensemble casts but don't come together until the end like Babel?

I'll hazard a guess and say it's still an ensemble film. Whether it's a film like Ocean's Eleven (where the actors share lots and lots of screen time) or more like Crash (where they interact occasionally, and on a smaller scale), you still have a large cast of equally important characters. Hence, ensemble.
