anyone know what the standard texts/scholars are for this subject? I am just looking for the top three or so in order to get an overview of the subject. The most current scholarship in book form preferably. Keep coming across these so I will check them out.

has a point.
Don't forget to look for French sources and you should be able to get translations of the 'major' works.

Here's some online info about a course (http://faculty.marianopolis.edu/c.belanger/quebechistory/index.htm) in Quebec History. Why not email the instructor for recommendations?
There's also an official page (http://www.ville.quebec.qc.ca/en/exploration/histoire.shtml) for Quebec City, which includes some info on history and archaeology--you could email the site and ask if they can put you in touch with some of the people who contributed.
You could also try contacting Archéo-Québec (http://www.archeoquebec.com/e-0105.html) for recommendations of books or people to speak to.
Another Quebec History page (http://www.lbpsb.qc.ca/%7Ehistory//)--scroll down for email addresses of the people who put it together.
Don't hesitate to contact scholars--they tend to be very approachable, and don't mind taking a few minutes to give you suggestions.

I concur with Marlys that you shouldn't be shy about contacting scholars. I was once a teaching assistant for one of Alan Greer's undergraduate courses at the University of Toronto, and I can vouch that he's very approachable. If you asked him for some bibliographical pointers, he'd probably be happy to provide you with the titles of some good books and articles.
