Rock 'N' Roll or rock n roll? Also, need help...

Hi all, can anyone help? Does Rock 'n' Roll need to be capitalized? When writing with "rock music" not capitalized? Argh! Also, how does one quote sources from books that are quoting from another source? How do you properly list source? From the original book, or the book quoting the original book?

I was always taught either Rock 'n' Roll or rock 'n' roll.

Yes, I was thinking you could use either, just keep it uniform throughout the document, do not switch up. I think that is correct. Just checking others opinions too. Thank you!

And it is okay just to write it out. That's what the Rock and Roll Hall of Fame does.

Yes, but note also the apostrophes around the 'n'.
