Should I list stories that have been accepted for publication but not actually published yet in cover letters?

You could say something like, "and my story, "A Little Night Music" has been accepted for June publication by "Sewage Monthly"...

Or maybe, "and I have stories coming out in "Advanced Modeling" and "Cornerstone Gibberish" later this month..."

If you think it's necessary to mention credits. I usually don't bother unless they ask me for a short bio or something.

I'd consider mentioning it if it was one to a well known market.

Another thing I'd take into consideration is whether or not the publication has been established for a while and likely to stay that way. I've had work accepted for publication, only to have the magazine fold before my story could appear.
