Which means I probably just need better searching skills. I want to know, what is the type or font style required by publishers when you submit a manuscript, and doesn't double-spacing make a manuscript that is about a foot thick?

Yeah, these questions pops up every so often.
Most say go with a Courier font (I used Courier Dark), or perhaps Times Roman; but follow the publisher's guidelines if they have one.
And yes, double space even if it uses a lot of paper. The only exception is if you're submitting to an e-zine (sometimes they prefer single space).
