Faux Pas?

I got my first bite -- a request for the first 30 pages of my novel.
I mailed it out yesterday in a nice folder inside of 10x13. However, the post office was so God-damned hectic that I thought I had forgotten to send a 10x13 SASE, or that I sent him one that I had slightly screwed up on. So today I mailed him just an SASE, explaining briefly that I may have forgotten to include one. But then I realized that I had in fact mailed him a correct SASE the first time. I was debating whether or not to go back to the post office to stop delivery on my SASE re-send, but I chose not to.
Is this a big deal? Or am I being too panicky?

Too panicky.

Anyway, the post office can't retrieve an envelope from it's system once it's in there.

I know exactly how you feel! I once took several things to the post office at the same time and boxed up my manuscript there. When I got home, I couldn't remember mailing a personal letter that I had brought along. I searched my car and my house and couldn't find the letter. My only conclusion was that I had accidentally stuck it in the box with the manuscript. I panicked figuring being an idiot was automatic rejection. I did get rejected, but not for that. I found the letter tucked in the back of my car a couple months later.

Anyway, in your scenario, I would think the agent would appreciate the fact you were smart enough to send a separate letter with a SASE since you weren't sure. If anything, it probably reflects positively on you. And as Miss Snark would say, it's ultimately the writing that matters anyway.
