If you submit to the main editor/address and it turns out the publisher has an imprint that handles that subject, do they generally pass your submission down the office or just stamp it "no" and send it back?

If you have addressed the internal letter/proposal to the proper imprint, it's probably going to be sent down the line. However, if you've just sent the proposal to "XYZ Publishing" and hoped they'd figure out which imprint it should go to, it's not going to happen.

Thanks, Nomad.

I figure mine will probably make it. The publisher in question is small, and probably not more than a small office with cubicles. Their guidelines were not as precise as I like; hence my confusion over where to direct it.
