Warm Chickpea Salad (work in progress)

Just had a yummy lunch, but it needs a bit of work.

Soak 1 cup chickpeas in hot, lightly salted water overnight, then bring to the boil next day and cook until tender.

Heat a pan with a splash of olive oil, about 4 cloves garlic (crushed and chopped) 1/4 preserved lemon (washed and finely chopped), and one courgette, sliced or julienned into wafer thin slivers. Add chickpeas and cook, stirring regularly, until chickpeas are browned. Add a handful of finely chopped fresh fennel leaves and cook a few minutes more.

It definitely needs something. I'm thinking if I add a handful of grated halloumi as it cooks, and serve it on baby spinach. It'd be lovely stirred in pasta as well, but it'd need a different cheese... something with more melting potential than halloumi, but still sharp in taste.

Any suggestions?

I'd add a bit of Feta and Stilton.

Also try a different technique with the chickpeas. Start with room temperature water for the soak. If you start with hot, you kill the bean before the soak and it changes how the bean hydrates and also doesn't start to convert the starches to sugars. It's a taste and texture thing that is personal preference. See which way you prefer.

How about you grate some fresh romano or pamesan and make cheese lace? Cheese lace is teh winz. IIRC, you need to grate it yourself for some reason (been a while since I made it, but it's not hard to make & it presents well). You could lay the lace over top of the salad.

Also, maybe a pinch of cumin? I like cumin on chickpeas, and I think it would work with everything else you mentioned.

Edit: I bet that Greek cheese they use in saganaki would work too.

Cumin or corriander (the dried and ground versions). Also, onion. Feta for the cheese. I'm thinking it also needs some heat: cayenne or some kind of hot pepper.

Mint at the end with the fennel too.

I'd serve over rice rather than pasta though...

Ooooh I'm liking all of these ideas! I might have to try a few different versions to see which works best!

The parmesan lace sounds a bit posh and fancy for us - would be great for a dinner party, but the closest we come to that is sharing a dinner on our laps on the sofa instead of sat in front of the 'puter screens! Hmmm...

I'm all about the impractical cooking. Ask me about my ramen noodle recipe (prep time: 50+ hours, active time: ~10 hours).

Try adding some tahini too. Chickpeas and tahini were made for each other.

Ooh yes, tahini!

As it happens, I got lucky the other day. The 99p shop had a crate full of reject tahini jars - contents perfect, they just got mislabelled as "chilli paste" so the supermarkets couldn't sell them. Tahini is usually out of my budget, but ye gods do I love it.

That said, at this point I'm considering dragging out the slow cooker and doing some lamb seared in tahini with spinach, chickpeas, preserved lemon, garlic, etc. Because my mouth is watering just thinking of all the different suggestions I've received!

One of these days I will get a proper tagine for this stuff.
