Emergency Chocolate Cupcakes

So it's late at night, you're tired and the kids are, per usual, complaining about how there's nothing to eat. Your cupboard is fairly bare and you need to shove something in their mouths to get them to shut up, Child Protective Services having already warned you against gagging them again. Here's what you do.

Preheat the oven to 400.

1/2 cup flour (white, wheat, bread, at this point with the kids screaming, it doesn't really matter).

1 1/4 tsp baking powder.

1/4 tsp baking soda (use the stuff in the back of the fridge that's been ostensibly absorbing the fish odors if you want)

2 packets of that old hot cocoa mix that's been sitting in the back of your cupboard since the beginning of winter or longer. If it's got those stale crunchy "marshmellows" in it, so much the better.

3 1/2 Tbl melted butter (just throw it in a coffee cup and nuke it)

1 beaten egg. (Makes you feel better because you can't beat your kids. That fake egg stuff will work fine too.

1/2 cup milk.

Mix the dry ingredients first, then add the wet (I always add the butter last. Not sure why, but it seems to work better)

Douse your muffin pans with non stick spray, fill the tins up 3/4 of the way and throw in the oven for 9 or ten minutes or until you're done listening to the kids.

Pull them out, let them cool and serve. Don't worry about frosting. Those stale crunchy marshmellows floated to the top while you were cooking and got all gooey anyways. Besides, anymore sugar and the kids will never get to bed. Makes about 6 1/2 cupcakes. (Give the dog the 1/2 for having to listen to the kids. He deserves it)

No promises on the quality, but worked wonders on getting the kids to pipe down.
