First of all, did I spell spaghetti right? Haven't used that word in any of my writing lately. I guess I need more scenes in an Italian restaurant.

OK, to get to the point...I'm looking for recipes for spaghetti squash. I've got those in my BH&G cookbook, but I'm looking for something "over and above".

Spaghetti squash is an excellent accompaniment to many meals. Just don't try to use it in place of actual spaghetti.

But, like other squash types, it can be cooked very simply. My favorite method is to stab the thing six or eight times with a fork, to allow venting, and to bake (~25 minutes @ 300) or microwave i (~10 minutes). When done, cut in half, scoop out the seeds, which latter process is much easier than with other squashes, especially after cooking the thing, add some butter, maybe a little white wine, and if you like it sweeter, honey and cinnamon to desired taste. My son recently brought home some date sugar from a specialty store, and that would work very well, too.

I like to use it in place of noodles in chicken Alfredo, but i don't care for it in marinara sauce.

I like it simply with a lil salt, pepper and freshly-grated parmesan cheese on it while it's still piping hot. ;)

DON'T

While spaghetti squash is good and looks like spaghetti, it is a LOUSY substitute for any, excepy way over-cooked, pasta.

I thought of this thread today when I made dinner.
I found a spaghetti squash at the store on the weekend and picked it up. I made dinner with it tonight. It was awesome!

My Fiance also declared it amazing and ate it in about five minutes. I showed a bit more restraint by finishing mine in ten ;)

From the, "What's for dinner," thread,
My wife thought the spaghetti squash was boring so I pulverized it in the processor, tossed in a few carrots, mace, ginger, nutmeg and cayenne; folded in some eggs and brown sugar and baked it in a pie shell. Topped the pie with whipped cream and pine nuts...mmm

The most interesting thing was that I tossed the carrots into the processor raw. Don't try that with eggs in there though, the texture of the pie will be weird. Fold the eggs in by hand or in a slow speed mixer, not in a high speed processor.
