I was wondering if there were any "modern" novels that explore the theme of romance between a human mortal (protagonist) and an immortal female (love interest).

Didn't Ann Rice have a few of her vampire novels deal with this? I am thinking Queen of the Damned but its been so long since I sloshed through the book...

I appreciate each of the replies, and have glanced through the given titles. It seems in the mentioned titles, the story is told through the female immortal's POV. I'm looking for stories told from the male mortal's POV.

Also, please don't recommend Stephenie Meyer-level literature :)
*NOT implying the recommended stories are SM-level

Consider Peter S Beagle's The Folk of the Air. Not a Romance, but Beagle is such a fine writer he's likely to strike interesting sparks.

What springs to mind first, when I hear mortal man in love with immortal, is H Rider Haggard's She and La Belle Dame Sans Merci.

If you are searching books that focus only on the male mortal's POV, it will be an incredibly rare find in the romance genre (which typically feature the POVs of the hero and heroine).

Which means... you're in a prime position to write it! Our first romance was male first person POV and it's still our bestseller. But the male was the supernatural (werewolf). I'd imagine it would work well the other way too. :)
