There's a command in Word for when you start a new chapter so that the placement of the chapter heading doesn't change even when you add or subtract material from the previous chapter. I once knew it, but now I've forgotten. Can anybody help? Thanks.

You mean, start the chapter on a new page? You specify the Paragraph setting to set a page break before and then you set the Spacing Before to whatever number of lines you want.

It's in the Format->Paragraph settings. If you are using Styles (Heading 1, ...) then it's in the paragraph settings of that Style. Same dialog box.
