I'm planning to sub my WIP into a novel competition, and the rules state that the material entered should be 5,000 words.

If I enter just chapter 1, that is only 2,500. If I enter chapter two also, that goes to c. 7,000.

Advice?

Break the submission at the end of a scene, close to, but not more than, 5,000 words. So, for example, at a scene break in the middle of chapter 2 - even if you have to create a scene break for the competition submission. Because you cannot enter more than 5,000 words, right? And it would be silly to enter only 2,500.

And good luck.
