Here's a webpages with ten recipes from Southern Living. The meals themselves are not so unusual, but are nice variations on some familiar entrees (including Nashville-Style Hot Catfish). They called them "low-cost dinners" but I don't think I'd go that far considering the ingredients of some of them.

I didn't realize until I moved up here that I missed catfish!

I'm going to have to get to a fishmonger's and see if I can find some. The regular supermarkets don't carry it. I also need to find hominy somewhere. I've been feeling like posole, and I'm kind of screwed until I find some.
