I want something to be sprouting and green shortly after the snow thaws (early April in southern Ontario). The idea is for the characters to walk across some grass and notice the new growth just beginning to show under the over-wintered leaves, and then go to a farmer's field and see new growth there, too. A sort of fertility motif.
I've found some pictures of winter wheat, but I can't figure out the exact time frame because the photos are taken in all different climate zones.
So what I'm looking for is a crop that would be greening up at just about the same time that lawn grass would be greening up. Is winter wheat my best bet, or is there something better?
