We're having liver and bacon with onion gravy and mash tonight. Yummy, warming and nutritious.

As it turns out though, a packet of lambs liver has too much meat in to feed two people for one meal, but not enough to stretch to a second meal by itself. So I'm in the need of a handy recipe that can use a small amount of lambs liver as part of it, without the liver being the focus.

Anyone got any suggestions?

Maybe . . . wrap it and freeze it and use it the next time you need a meal for one person. Just add a side item or two then.

I've never actually frozen liver, so I'm just throwing something out there.

Go ahead and cook it. Add the leftovers to hummus. Put it in with the chickpeas when you grind them. You can also add any leftover onions and bacon.

Or go ahead and cook it and use it to make a pate.

If you freeze it, you could drop it into a stew the next time you make one. It'll absolutely fall apart with long, slow cooking and make the stew richer.
