I'm trying to acquire an understanding of movie soundtracks, specifically, when music should be playing, and how noticeable the music should be. Obviously, a good way to learn about this is to watch movies, but I want to supplement that kind of tactical research with some reading. Does anyone know of anything good to read on the subject? Thank you.

I took a whole course on it in college (and you can even major in it in some music departments). Check out on amazon - there are lots of books like "Music in Film," "Hearing the Movies." Or, google various courses at colleges for a sample syllabus. Such as Music&Cinema at albright:
