My MC is an artist. I would like to be able to include various inserts of the things she draws. I know a lot of publishers prefer to use their own illustrators for cover art and such, but I don't see a lot of novels with in-book illustrations. Anyone have any idea how to get that done?
Like would I make my own sketches up to give them an idea of what I'm talking about, to see how they feel about it, or just ask them when I find an interested publisher?

AW. A very nice place!
... my 2 cents:

Unless you're a good artist, don't include any drawings with your submission. If you are a good artist then my advice would be to include a few on a separate page at the end of your manuscript if you get a full request. The drawings would be extra, so they should be presented as such and not given much prominence. If you're not so good of an artist then just wait till you get a deal with a publisher to run sketches by them as guides for their own in-house illustrators if they decide to go with illustrations. You might mention them of course in a cover letter if you get a full request. But again, don't make too much of a fuss about them. G'luck. An artist MC sounds cool :)

There's a book called Les Enfants Terribles which has the author's illustrations. However he was very stylish and they are quite abstract.

Unless your drawings are interesting, I wouldn't bother.
