A fairy and her friends find two humans in their realm and decide to care for them, but they must evacuate their city due to an outside threat. This would then lead to the story of their journey to the other city, the evils they encounter, and the creatures that they side with or defeat

More importantly, what do you think?

If you can make the characters interesting and make the reader care about them, then it becomes a readable story.

How did these two humans end up in Faerie to begin with? Will they cooperate with the fairies who find them and set out to help them?

I will say what I always say.

Whether an Idea is a good idea or a bad idea is almost irrelevant. I believe that the vast majority of ideas are good idea.

but again, a good idea is worthless. They are a dime a dozen. The real value, the real worth, is in the execution of the idea.

if you have interesting characters, interesting conflicts, told in an interesting way, then you have a hit.

But if you tell a boring story with flat characters and horrid writing, then it doesn't matter how good the idea is.

Anyways, that is my two cents.

I'd have to say after recent experiences that approaching a novel with a specific idea is essential (might sound obvious to some, didn't to me)
As for your idea, the 'outside threat' could be to the human themselves from the fairy authorities, ie humans are strictly forbidden in fairy land.
The two fairys decide to help the now hunted humans to escape because they were once helped by humans.
As for 'why' and 'how' - they will arise from this central narrative impulse
eg why cos humans are bad, how cos of an ancient portal between the two cultures (yes i know 'portal' ha ha, still...)
Now you might have an engine...

I'd be curious about the norms concerning humans/fairies/inhabitants in the fairy realm.
Do they hate humans? tolerate them as slaves? is it a crime to shelter them?
While on the journey, are the threats 'evil' to the humans, while a minor annoyance to the fairies? Or, is everyone scared sh*tless?
This would give you more tension, IMHO.
