Anything by Terry Pratchett.
Walter Moers' books, I think he's up to the 4th in his series
Pullman's His Dark Materials series
Narnia series
James A Owens' Imaginarium Geographica series

And some AW authors with great fantasy series in various stages of completeness: Melissa Marr, Jim C Hines, Adrienne Kress, Aprilynne Pike. There are others and hopefully they will turn up here! :D

Jim Butcher's series, The Dresden Files
Kim Harrison's series, The Hollows

That should keep you busy for a while.

The Southern Vampire Mysteries by Charlaine Harris
The show True Blood is based off them. If liked Twilight then this series will really draw you in. There are vampires and forbidden love, and Sookie is way funnier and more exciting than Bella.

Right now, my two favorite ongoing series are the Harper Connely series by Charlaine Harris, and the Dresden Files series by Jim Butcher. The Sookie Stackhouse books (aka, Southern Vampire Mysteries) by Charlaine Harriss are also a lot of fun, but the most recent one was a bit disappointing. Not sure if this is precisely the genre you are looking for, but they are good for a quick, trashy, fun read. And also, infinitely better than Twilight.
