What to do in Scotland?

Off to Scotland in January (first stop: Edinburgh), and I know there are a few folks on here who are either from Scotland, live in Scotland, or have been to Scotland -- so, what to do over there? What to see? I'm not a touristy person. I don't usually do the normal sightseeing stuff (and if I do, I get it over with in the first day or so). I like the off-the-beaten-track stuff. Any suggestions? I've got a couple of weeks (and a kid), so a lot of the country can be covered...

Also, don't count on kilts. What few you see will be on the heinous backsides of blubbery alcoholic guys. No-one in Scotland looks like Gerard Butler.

HOWEVER. Edinburgh is chock-full of Aussies and Irishmen, so you'll feel right at home.

Well...we can get shitfaced in Dundee (which is where I live), go to Edinburgh, stalk Aussies, loaf about a bit, puke in a gutter and wake up somewhere near Glasgow?

I impressed Perks by telling her Edinburgh is one of only two cities in the world built upon itself.

Fo' realz. It's one city built on top of another. Hence all the dungeons and undergroundyness.
