Word count?

7000 words is still short story. Ten times that much is a novel.

How long should a paranormal fantasy novel be roughly? 60k? 100k? I'm planning on writing one soon, and would like to know what to aim for. Thanks!

For safety's sake, sometimes it's best to have a novel that clocks in at around 80k to 100k words. Anything dramatically below that range becomes a difficult sell to an agent, and they might not bother.

Then again, write to your story's demands and then worry about word count later. The worst thing you can do is worry about little things like this until you're done. Then once you have your finished product in front of you, then edit and adjust the pacing of the book accordingly.

But if you've edited it over and over and all you can manage is 70k words, then try querying agents anyways. Sometimes it all depends on the pitch and who you're pitching to.
