I would have to say that the soundtrack of Once is probably one of my faves. I also like the soundtrack from the Last of the Mohicans. Run Lola Run's was good too, if you like crazy German techno.

Into the Wild with Eddy Vedder has a great soundrack , Dances With Wolves, O Lucky Man with Malcolm MacDowall and the soundtrack which is his own album. Breakfast at Tiffany's...Moon River so many more but these come to mind.

Stardust. Absolutely frikken great soundtrack.

Streets of Fire - though anything involving Jim Steinman generally turns out great.

The Bodyguard - no, I take that back. The soundtrack is MUCH better than the movie. Because once upon a time Whitney Houston wasn't a crack fiend and could actually choose good songs.

If we say that the Peacekeeper Wars was a movie, then Farscape has to be added to the list (especially La Crimosa and Salve Me from the fourth season).

(of course I'll add my voice to the chorus of Lord of the Rings - I almost believe that Howard Shore could be Beethoevan or Mozart reincarnated for a new age).

All the Star Wars films (I KNOW John Williams has been reincarnated!)
Danny Elfman's work for Tim Burton. Especially on Edward Scissorhands.
