But I have different ones for different reeeeeeeeeeasons! Like if I were picking just based on what the lyrics mean to me, Round Here by Counting Crows is it. But if I were picking based on the song that haunts me, Hallelujah by Leonard Cohen. But if I were picking based on the song that most moved me to sing, River in Judea. But if I wanted the fame and endless respect of the world, Yesterday.

I like several of the ones listed here, such as "Imagine", "What a Wonderful World", and "American Pie" and I like many many more but I think the one I would most like to have written is "Piano Man" by Billy Joel for the way it captures the life of a performer.
