I know I've probably posted this recipe before, but it's an excellent quick bread (it takes less than 2 minutes to whip up!) It doesn't have yeast, but it does have beer, which gives it a yeasty taste. The recipe doesn't call for the pan to be greased but I always do, and sometimes I will add some grated cheese which is good too. My son and his buds seem to drink the cheapest beer, and it works just fine for this recipe.

Still can't find jars or packets of dried yeast around these parts (DC Metro) but my husband found fresh (cake) yeast at our local Italian deli. The downside of fresh yeast is that it isn't very shelf stable and consequently has a short shelf life - that's why you don't find it in stores very often. I found working with it very pleasant - it seems to be more "active" than dried yeast and has a great aroma.

When Hubs found it he messaged me a photo - it comes in 1 lb. blocks - so I asked him to buy one block. Naturally, he bought two, both of which expire on May 28th. I did some research online and there seemed to be a fairly even split about whether you could freeze it, so I froze one and will see what happens when I try to use it. Meantime I'm halfway through the other block, which I keep tightly wrapped in plastic in the coldest part of the refrigerator.

People may indeed be hoarding yeast, but I think they may also want both a project and the comfort of home-baked goods.

They sell a wide variety of flour, including buckwheat and rye, as well as wheat and cornmeal. I've bought rye flour from them.

These are artisanal mills; they are not cheap.

This thread inspired me to look around. Not in the northeast, but Janie's Mill in Illinois looks promising and more reasonably priced than the others I saw. I'll let you know how it comes out (or if I know enough to know good flour or good bread!) https://www.janiesmill.com
