Looking for advice about how to get narrative nonfiction and memoir published in small, exquisite literary magazines. Also, when they say you can't simultaneously submit---hmmm, can they tell if you do? I haven't simultaneously submitted when told not to--but if they expect an exclusive AND they expect me to wait over two months, well, hmmmmmmm. ?????

The trade publishing process itself isn't very fast overall, so it's good to gain a little patience, especially as any agent/publisher will be dealing with hundreds of submissions and authors. :) If they say no simultaneous submissions, I'd certainly respect their wishes. :) Two months isn't really long, not if you're keeping busy with your next project!! And rather you sub to one and get rejected, than sub to all and get rejected. :) And they will know if they buy the work and find it's been accepted elsewhere! It could damage furture projects with them!

Two months is on the quicker side. Expect three as standard.
As Fallen said, if they are currently reading your submission and then find out you've had it accepted elsewhere, they will not look well on you for wasting their time. Your next submission after that may go straight in the bin.
