What are some good memoirs about people overcoming mental illness?

A new one I've been hearing good things about (but haven't read yet) is Zack McDermott's Gorilla and the Bird about being bipolar.

Susanna Kaysen's Girl, Interrupted is a classic. Julie Barton's Dog Medicine is a good memoir about depression.

The Center Cannot Hold: My Journey Through Madness, by Elyn R. Saks, is great. Elyn has schizophrenia, but she's also a professor, lawyer, and psychiatrist.

Hope Jahren's Lab Girl. It's probably less explicit than some of the ones you've listed, but it does it in an interesting way--you read the book and you're following her life, but slowly you get the sense that things aren't quite right. She's dealing with bipolar disorder.
