Interesting link! I wish we had soil to actually dig into to build something like that...but our property is so rocky, the only way to do it would be with dynamite
I usually keep some Swiss chard and tomatoes in big planters inside. Because we're at around 60° north, they sort of go into hibernation between late November and late January, though. We're off-grid, otherwise using grow lights would solve that problem.
