If the prose is unremarkable, I cruise along as fast as the story permits.
If the prose sings, I'll often pause to listen to it.
Most recently, I've found Wolf Hall and Bring Up the Bodies to be perfect books for both styles -- I'd cruise for the plot, then go back and savor the brilliant words, words, words.
