Tonight, I bought myself a 12-ounce ribeye, salted and peppered it liberally, preheated a cast-iron skillet in the oven until it was screaming hot and threw the steak on it for about 10 minutes, turning it once. I let it rest for about 8 minutes while I sauteed some spinach in garlic. Then I scarfed it down with 6 ounces of Oregon Pinot Noir. I had four gingersnaps for dessert.
