Pan-seared salmon filet (with crispy skin!) and corn on the cob. A bowl of cherries for dessert. I love summer!

Dredged in flour, pan-fried in butter, and served with a white wine pan sauce, I think. Maybe on a bed of spinach. Mmmmmm... I may have to go to the fish store today! :evil

So, Husband dearest made me a delicious meal to survive a busy 12-hour shift on the delivery ward with barely any sleep. It was rice with chicken, pak choi and oyster/soy sauce and it was heavenly. More so as I was hungry and tired and had walked around all day on my feet without being able to shove anything else in my mouth.

I live in The Netherlands, and the people here are very... basic when it comes to food. Potatoes, meat and some cooked vegetable is the standard here. So when the ward smelled something different (spices! sauce! a "strange" veggie!) they came smelling my food like flies on syrup. Everyone wanted a taste.

Tri-color elbow macaroni (semolina, tomato, spinach) and a sauce (from a jar) with added onion, mushrooms, and sweet Italian sausage.

Caprese salad: a fat yellow heirloom tomato, fresh mozzarella that's never been in a fridge or cooler (so soft, so plump, still warm and leaking milk), basil leaves just plucked from the plant, and a drizzle of a spicy Sicilian olive oil from last fall's pressing. Perfect summer eats!

I still have enough tomato & mozzarella to make a second meal, but of course the mozz has sat in the fridge overnight so it will never be quite as perfect as it was the first time. Even a short chill tightens it up & changes the texture completely.

Salmon, coated with Helman's mayo, dijon mustard, lemon rind and dill and baked. Served with lemon rice, and tossed salad.

Tuna salad sandwiches and potato salad. All of it ready-made from the store. Even pouring some cereal into a bowl and pouring milk onto the cereal feels like it would take too much effort tonight.
