Meal Planning​


Monday: Homemade macaroni & cheese, stuffed meatballs and cinnamon roasted butternut squash

Tuesday: Pan-fried fried fish with prosciutto-wrapped asparagus and pine nuts couscous

Wednesday: Stuffed meatballs with garlic lemon and parmesan roasted brussels sprouts Leftovers

Thursday: Dry cereal or whatever

Friday: The tears of our forefathers

Saturday: THE KITCHEN IS CLOSED I HATE EVERYONE

First good belly laugh of the day!

We're having the fastest meal I make, which is salmon with wilted spinach and tomato served on rice, with some seasonings in there. Twenty-two minutes if you're fast chopping a tomato.

I'm not.

Leftover takeout sandwiches from lunch, tonight.

Leftover curry takeout from yesterday. But I did cook some chicken quesadillas for our packed lunches tomorrow. And tomorrow night I'm running a DnD game so we always order, so I've managed to get out of cooking dinner for 3 nights this week!

Chicken with creamy jalapeno sauce, over brown basmati.

The CSA was giving us ten (big!) jalapenos for every “selection” (we get six each week), so I have a loooot of jalapenos to use before they go bad. Have recipes stacked up, and then I may pickle any remainders.

Southwestern turkey bake, except with chicken.

For dessert, an apple crisp recipe I got from my ex, that she called Swedish apple pie. Not sure of its origins, but there’s only two good things I got from that marriage:

Friday: Nachos (ground beef cooked with taco seasoning and canned tomatoes with chiles, salted lime tortilla chips, Mexican shredded cheese, and melted queso, served with sour cream because it totally needs more dairy)
Saturday: Enchiladas with the leftover beef mixture
Tonight: hot honey pork chops and mashed potatoes

I impulse bought a rotisserie chicken on Saturday and ate the best parts right away. Now I've got the rest of it to use up, and I think I'm going to make leftover-chicken curry, an old favorite.

We're having a little heat wave, temps near ninety, so there's one more go-round of a summer favorite, Salmon Panzanella, which is a salad consisting of salmon, grape tomatoes, red onion, avocado, and home-made garlic croutons. Pinot Noir is just right.

Pork tenderloin, potatoes, applesauce and salad. I'm trying to get the house back in order after having some family in for a quick visit, and cannot spare the brain cells to come up with a more exciting meal.
