I've got pickled bamboo shoots (from the international market bulk bin, I didn't make any brine for 'em) and bean sprouts for ramen and stir fries in the fridge. I've got five ramen eggs hanging out in the fridge. I just made a new batch of jalapenos and onions in brine to enjoy on corn tortillas. 100ml vinegar, 12.5g salt, 25g sugar. I don't get the salt and sugar exact, I think it was 13 and 28g. And 100ml water. Brine can be anything from 1:0 to 1:1 on vinegar to water. Water can't go over equal parts or it throws off the brine.

It is Wednesday, therefore spaghetti. Every three weeks I make a big crockpot full, so the whole house smells of tomato-y, garlicky, sausage-y goodness. I invited my recently bereaved younger brother to join us for dinner, so my husband has made a run to the local Italian deli to get bread and cannolis.

Even with an extra for dinner, I'll have enough to freeze for two more meals.

I make a huge dutch oven vat of spaghetti sauce to freeze, and it doubles as pizza sauce. I make my own dough, so we have pizza at least once a week.

It's a difficult decision today. I'm gonna have my pre-fasting meal in a hour and I have two gravies. One is a recipe of Brinjal and potatoes cooked in yogurt. Other is chicken Qorma. It always happens, some days there is some dull gravy to eat and other days mama makes 2 favorite recipes together. It's such a cruel decision 😅.I still think I'll eat Brinjal. I can't resist them.

I buy the tortilla chips and sliced jalapeno peppers for loaded nachos. A frozen hamburger patty, thawed most of the way in the microwave, then cooked with taco seasoning mix. I almost always have "diced" onion (run through mandolin on french fry cut, a few edges are longer). Melt shredded cheese over chips in the microwave. The beef is the only thing I actually prep or cook when I decide to make loaded nachos. Dollop of salsa. Sometimes I add sour cream, most of the time I don't.

Presto. Loaded nachos.

Tonight, sushi with a friend at the place we usually go to. They're good. I'm always tempted by all sorts of things on their menu, but I nearly always get the same few favorites. Will I experiment with something different tonight, or will it be my usual order? The future of my dinner hangs in the balance...

Tomorrow is Pi Day. So it's gonna have to be pizza!

Tonight I'm thinking I'm going to get some hamburger patties from the store and fry them up to have alongside some leftover cabbage and mashed potatoes (and of course there's gravy).

A very uninspired Brigid went to the grocery store hoping to find something I wanted for dinner. Instead of finding anything, I grabbed a ball of pizza dough and some bacon to have leftover pizza. Aka, put whatever leftovers we have on the dough. I ended up with nine cheeses, onion, sausage, and bacon.

I'm pan-searing a couple of wee filet mignons, and making up for their wee-ness with large baked potatoes (russet for the husband, sweet potato for me) and a big side salad.

Beef prices are more ridiculous than ever.

Yesterday had to be leftover chicken thighs because my beef shin hadn't thawed in time. So today is beef shin -- seared well, then simmering in a broth with onion, mushroom, garlic, and thyme. I've got leftover mashed potatoes and corn, and some beans I picked this morning I can cook, so dinner should be sorted.

Happily I found and tried, with success, a biscotti recipe that uses egg whites plus a bit of butter (and flour, sugar, baking powder, and nuts/dried fruit). They were a hit with all four of us who've tried them. Yay! Since I've got about two hundred egg whites in the freezer from the great pasta making programme.....

Yep, meringue and angel food cake will be featuring regularly.

My partner's pasta recipe is two whole eggs and four egg yolks, approx -- it has to be done by weight, and being a scientist of course my partner weighs everything to the last gram..... so sometimes I get like a tenth of a whole egg to use. Happily, the cat likes eggs.
