At the (hopefully not facetious) request of Kid1, I made pickled eggs. Now that they're made, does one just eat pickled eggs or is there something one can make with them? Sliced on sandwiches or something...

My family eats them but I'm a little sketched out because I've seen too many episodes of the Simpsons.

I use the japanese version in ramen.

This site suggests...

Topping for a salad
On a burger
Make mini sandwiches by cutting the egg in half and using the egg as the "bread"
Potato salad
Cut in half, top with a small piece of fried chicken, drizzle with hot sauce
Deviled Eggs
Egg salad
Use in your breakfast burrito
Cut up over a bowl of rice
On toast
On your grilled cheese sandwich

I pickle quails' eggs and serve them as tapas or nibbles dipped in celery salt. They're a big favourite with my family, particularly my son in law and a nephew.

For anyone wondering, dropping dried habenero pepper into the brine didn't make the eggs spicy. They had a little bit of flavor but there was no fire, according to my husband.
