I went to make a one egg chocolate cake in my mini bunt pan. Equal parts flour, sugar, olive oil and egg. Well, 1/4 cup is close enough to two ounces. A 1/2t each of baking powder and vanilla.

Realized we don't have cocoa powder I'd planned to add. So I hope to have a nice yellow cake in a few.

Whisked egg and sugar with a fork. Added the oil and vanilla and whisked again. Had flour and baking soda ready in another bowl, dumped those in and stirred.

I could take pictures, if I hadn't eaten it. And if I had a photo hosting site.

Nice, dense. Slight off taste from making an olive oil cake instead of a butter cake. Put a drizzle of powdered sugar, milk and vanilla glaze on it. It was good.
