I've been making a few small loaves of bread lately. Today, I'm trying my hand at cinnamon rolls. Enriched dough, added a bit of olive oil to my standard 5 parts flour to 3 parts water. Added a couple tablespoons of sugar and a bit of salt to "brighten" the taste of the dough. Remembered to measure the water first and added yeast to bloom before adding the flour, it's been rising fine when I forget and put yeast in at the same time as the flour and water together, but I want to make it the correct way.

It's in the first rise. When it's ready, I'll punch it down into a square, add brown sugar and cinnamon to make the gooey inside. Are there any gotchas I should be aware of?

It's been yonks since I made cinnamon rolls from scratch, but from what I remember, it sounds as if you've got things well in hand.

I'm puzzled by the olive oil. I'd use regular vegetable oil or peanut oil.

Whipped cream cheese makes the best frosting. I would use a block of regular cream cheese, use a hand mixer to whip it while adding a little bit of shortening to make it stiffer. When whipping, you can shake in a few drops of lemon, orange, or lime extract.

We always have olive oil on hand for cooking. We don't usually have regular vegetable oil or peanut oil.

They came out right. Roommate and I enjoyed, Spouse, Roommate's spouse and Kid have not tried them yet. I'll have to do them again.
