I like my brownies fudgy and with chocolate chips. With nary a chip in the house last night I had to get creative. So I eyed a pile of tootsie rolls from Halloween. Hmm. I chopped 'em up and tossed 'em into the mix, not quite certain how the concoction would turn out... I have to admit, the brownies are pretty delish. The tootsies melted to a satifactory level of goo and gave me the extra burst of chocolate I was craving. Mmm.


Also, my favorite way to prepare a roast? Stick it, frozen, in the crockpot and dump a can of Rotel on top. Let it simmer all day, then eat with mashed taters and corn bread. Yummy.

Baked chicken thighs with browned butter sage sauce --you bake the thighs (with skin), then cover with grated parmesean. In the meantime, melt butter until it turns brown, float sage leaves in butter. Pour melted butter over chicken --sears the cheese onto the skin, garnish with leaves. Also delicious on angel hair pasta. Recipie from Frugal Gourmet cooks Italian.

For dessert --German Chocolate Bundt Cake from the Cake Doctor does chocolate. 350, bundt pan greased and ready. In a bowl put one box of German chocolate cake, one tub of coconut pecan frosting, three eggs, a cup of water and a third cup of oil. I also add a teaspoon of vanilla and mini chocolate chips. Mix. Pour in bundt pan. Bake for 50 minutes, cool for 10, flip out of pan. Cool 20 minutes more, glaze or serve slightly warm with vanilla ice cream. Deadly good.

Your chocolate cake recipe reminds me...
My mom came across a super-easy, healthy and delicious cake recipe.

German chocolate cake mix (that's it - do not add anything it calls for)
2 egg beaters
1 can apple pie filling

Mix three ingredients (may have to cut the apples to smaller chunks) and bake for time and at temperature on cake mix box.

Cool. Top with Cool Whip.

It's the moistest cake I've ever had. And though the apples with chocolate sounds odd, it's awesome.

Breakfast on the go:

(2) Flour tortillas
1 apple of your choice
(2) slices of Swiss cheese
Splenda and cinnamon

Slice the apple and put on top of the tortillas. Put a slice of cheese over the apple slices, sprinkle with Splenda and cinnamon and put in the microwave for 40 seconds. Roll it up and go. :D

Or

1 large spinach tortilla
(2) soft boiled eggs
(1) slice of pepper jack cheese

Spray the tortilla with butter, slice the soft boiled eggs, add the cheese and put in microwave for 50 seconds. Roll it up and :Thumbs:

So today I was looking at new apartments (ick, moving) and they all served yummy cookies. Most were okay, sorta boring, but THEN at this cute little complex with round balconies (it's hard to explain) they had chocolate cookies, made from coco powder, with reeses pieces. OMG. so freaking fantastic.
Here is my Thanksgiving menu. Other friends are bringing the other parts of the meal not listed. I am linking because I don't want to take credit for everyone else's great work.

THe most delicious breakfast thing, like a giant flat pop over:

THE BIG PANCAKE

(pre-heat oven to 475)

put pan (large rectangular, like for a large tray of brownies) in oven with 1 stick of butter (I use 1/2 stick actually but more is yummier)
when butter is melted, pour in batter.

Batter:
.5 cup flour
.5 cup milk
2 eggs
a few squirts of lemon juice
mix it smooth

let cook 11:00 minutes. Watch it so it doesn't burn. Sprinkle powdered sugar on top. Good as is, or with jam.

For your brownies;

Make a frosting:

Icing sugar, melted butter, VERY strong cold coffee (best made with instant) a dash of vanilla flavoring. Cover the brownies, and while still soft empty a bag of frozen raspberries on top. Leave in fridge until cold. Cut and serve and you and your friends or family or both will experience a sugar-high to tell the grandkids about!

2 cans of tomato soup
2 cans of Hormel chili without beans
1 can of water

add chili powder to taste

I second that, but pancakes made with oatmeal instead and no lemon juice included. I like my pancakes with a scoop of vanilla ice cream, and melted nutella on top. A sprinkle of mixed fruit pieces on the side, and voila. :D Yummy.

I'm not entirely sure (shh, don't tell...). Doesn't Rachel Ray say that? I've never seen her in action.

Rotel is a brand name for canned tomatoes, peppers and chilies, and their juices. You can get a variety, from mild to HOT. Also makes a FABULOUS dip (for tortilla chips) when put in a crockpot with velveeta.

Your chili sounds great.

I have a recipe that is the same as this one but you add one can of drained, diced water chestnuts and 1/2 cup of sliced green onions.

It's served in a hallowed out Hawaiian Bread (if you can find it). Cut off the top, pull out the inside of the bread (leaving at least a 1" thick shell). Fill with the dip. Serve on a platter with the "inside bread" arranged around the bread bowl. If I can't find the Hawaiian Bread, I serve it with a thinly sliced crusty French baguette.

Also good for cleaning corrosion off your battery terminals (which, in Cray's case, is the equivallent of brushing his teeth).

Because Christmas is coming :D

Now pheasants were mentioned in another thread. And that's what I'm cooking this year, 'why pheasants?' I hear you cry. They're free :D My mother lives on farm land and the owner gives all the tenants a brace every christmas.
I'm getting one and here's what I'm going to do with it (once it's hung for two days and then skinned):

Butter it, then cover the top in bacon.
Stick it in the oven for half an hour on 400.
Turn down the oven to 325, pour 1/4 pint of dry cider over it, put a lid on and back in the oven for an hour.
Put another 1/4 pint of dry cider in a pan and reduce it by half.
Slice some shallots and cook in butter until soft. Add a sprinkle and a half of caster sugar and keep cooking.
Once they're caramelised, add flour and the reduced cider. Done!

Pheasant & sauce (and, of course, some veg).


What are y'all's plans for Christmas dinner? or are you all being traditional?

What I came up with my first day in the dorms.

Bestest meat spaghetti sauce:

a big handful hamburger meat
1 large onion chopped
3 cloves garlic (or more :D I love garlic!)
1 big can chopped tomatoes with their juice
Mixed spice (clove, nutmeg, cinammon, peppercorn) mix

Onion meets hot Oil who makes her turn mushy. Her very becoming golden blush attracts attention from Meat who with his pal Garlic come an interrupt the conversation and crowds out the Pot Ball. Thinks get a little heated and Meat's appearance darkens. Seeing the commotion, Tomato Can, the hostess, decides to get in the way, cool off tempers as it is. However, she gets into the argument and heats up badly. Her sister Spice seeing a chance for some fun, joins in.
