Ow! Sorry to hear about your back. I've had back trouble in the past and it's not fun. For me, lots of Aleve and ice packs usually help.

Happy Birthday Chunky!!

So here is a special ‘Chunky’ birthday meal for you!

‘Chunky’ Potato soup with bacon and ‘Chunky’ cheese cake brownies.

First I go to the trusty MOD ROOM kitchen and I get
6 slices bacon, cut into 1/2 inch pieces
a small leek, white part only, diced
2 cups diced potatoes
28 oz chicken broth
2 cups whole milk
1 cup frozen corn, thawed
1 teaspoon parsley flakes

In large frying pan over medium heat, bacon is cooked until crisp. (Hey you can smell the hickory smoked goodness of that bacon, can’t you???) Remove and set aside. Using bacon drippings, sauté potatoes until lightly browned.

Using the same pan, but with olive oil, sauté the leeks until softened.

Now the chicken broth goes into a large sauce pan. I add potatoes and leeks. Cover and bring to boil, reduce heat and simmer until potatoes are tender.

Shall we sip wine for about 15 minutes.? Yes we shall!

Now, I ightly mash with a potato masher, then add milk, corn, parsley and reserved bacon. Heated again until hot, it will fill Chunky’s poor empty belly.
Refrigerate leftovers. (as if……)

Now, as you are warding off starvation, I will bounce around the MOD ROOM KITCHEN and pull out

1-8ounce) package cream cheese, softened ,1/4 cup white sugar ,1 egg ,1 cup semisweet chocolate chips ,1/4 cup butter , 1 cup semisweet chocolate chips, 1/2 cup white sugar, 2 eggs, 2/3 cup all-purpose flour, 1/2 teaspoon baking powder AND …1/4 teaspoon salt

(Look at poor Cunky…he’s STARVING, poor thing…)

Quickly now I Preheat oven to 350 degrees F (175 degrees C). and Grease a 9 inch square baking pan.

I Combine cream cheese with 1/4 cup sugar and 1 egg in a mixing bowl and then I beat it….

until smooth.

Next I stir 1 cup chocolate chips into the cream cheese mixture. Set aside.

(Get your hands away from that or I will introduce you to ‘Bull Whip’ Martin. I promise I will!)

Oh Look! Someone filled a saucepan with water and boiled it. So, I turn the heat off, and set a heatproof mixing bowl over the water. In the mixing bowl, combine butter with the remaining cup of chocolate chips; stir until just melted and blended together.

Whew. (Sips wine) Now I stir in the remaining 1/2 cup sugar and 2 eggs, then sift together flour, baking powder, and salt; stir into chocolate until evenly blended.

Ok. Now I can pour half of the batter into the prepared baking pan. Spread the cream cheese mixture over the chocolate layer. Top with remaining chocolate mixture (this doesn't need to completely cover the cream cheese layer). Using a knife, swirl the top chocolate layer into the cream cheese to make a marble pattern. (pretty, ain’t it?)

Now, I bake it in a preheated oven at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until top is crinkled and edges pull away from sides of the pan.

I can't believe I almost missed this. Happy Birthday, Chunky Baby! A big kiss and a hug, plus some Robaxicil because I know what it's like to have a bad back. My honeymoon was ruined because of my back, and even though it was twenty three years ago I'm still a little bummed out.
