I have:

Created in Darkness by Troubled Americans [from McSweeneys]
Fierce Pajamas [from The New Yorker]
Laughing Matters [edited by Gene Shalit]
May Contain Nuts [edited by Michael J. Rosen]
More Mirth of a Nation [also edited by Michael J. Rosen]

and I am going to buy:

Mirth of a Nation [Rosen]
The Oxford Book of Humorous Prose

and I would like to know if anyone can suggest some more humor anthologies to check out.

I usually buy collections of one humorist, not anthologies, so I don't, sorry.

But some of those sound worthwhile. Do you find the humor level is sustained throughout, or are they hit and miss?

They were all pretty even. A couple pieces were a little more cerebral (not a bad thing), and there were a few that weren't to my liking, but the collections were consistent overall.

What I want to know is, are these anthologies something you can submit to? I've never seen one open to submissions yet. The McSweeneys and New Yorker anthologies are "best of"s. The others may be previously published stuff, too, picked from different places by the editor. Anyone know for sure?
