What ARE agents looking for? Post fic and nonfic

I go to agents' sites and see "We do not accept childrens....scifi....gardening" and wonder, what ARE they looking for? I mean, of course, every agency is different. But what are the hottest subjects in fiction and nonfiction do you think?

Agent sites usually also list what they are looking for. I'm going to take your question to be more specific as in, "What exactly are they looking for in the genres they do accept?"

Check out the works of authors signed with that agency. Check out what's on the shelves in the bookstores. That's probably it.

Look around their site, quite a few agent web pages do tell you what they like and what they look for. Also check the bookshelves to see what they represent - that'll tell you what they enjoy the most. Look at their list of authors, see what's being purchased.
