See...I didn't fergit. Now I will head intothe kitchen and cook your birthday meal:
I bought:
2 pounds beef briscuit
1/2 cup chopped onion
1 clove garlic, minced
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
½ cup mild green chile peppers, diced
1 can black beans (you can start with dried if you soften and cook them the day before
3 cups diced tomatoes (you can buy these canned)
1 jar.24 oz…medium salsa
6 (12 inch) flour tortillas, warmed
2 cups shredded lettuce
1 cup chopped tomatoes
2 cups shredded Mexican blend cheese
1/2 cup chpped scallions
4 jalapenos diced fine (if you are crazy…use habaneros)
½ lb bacon
And then I :
Put beef, onion, 2 cups of tomatoes, cumin, garlic, cumin, pepper, and green chiles into crock-pot. Cook at HIGH for 4 hours, then reduce heat to medium for 4 hours. The meat is ready when it pills apart with a fork.
Pull it apart with a fork. Reduce heat to low. Stir. Add jalapenos. Add black beans. Cook for an additional 35 to 40 min. (at this point you can remove the entire mix and refrigerate for use the next day if you need to)
Fry the bacon. Drain the fat. Put on towels. Set aside.
Put half of the salsa into a blender. Puree. Mix back in with un pureed salsa.
Place a warmed tortilla on a plate, and spoon a generous 1/2 cup of the beef mixture onto the center. Top with lettuce and tomato to your liking. Spoon some salsa inside. Roll up tortilla over the filling. Place strip of bacon on it. Spoon a generous amount of the sauce over the top, and sprinkle with cheese and scallions. Heat under broiler (or in the microwave for 30 seconds), until cheese is melted. Repeat with remaining tortillas.
finally: ram a buncha candles in it and....(sticks head out of kitchen, jumps back.)
