I think you need to contact the art department of any given publisher and see what their guidelines are for submitting a sample portfolio.

(And just so you know, chick-lit is kinda dead now. :( )

Depending on guidelines, I'd suggest having images ready of anything you've sold, and feature whatever styles you are comfortable working in.

Try checking out the websites of various cover artists. Their names will be on the inside page of the book. A quick google search may turn up a lot of websites and perhaps some won't mind sharing info on how they made sales. You could ask (if they have a contact addy) the name of their agent and perhaps get representation that way.

Definitely get your portfolio out there. I think a lot of publishers have in-house designers (I know we do), but there's always room for freelancers.
