Yes, it's probably a newbie question, but I'm a newbie gardener. :)
I have a crap ton of cherry tomatoes and just made a batch of pico de gallo. Delicious! But that only took care of about 3 cups of tomatoes. So can I make extra batches of pico and freeze it?

I know cooked salsa freezes. The pico is uncooked.

I think it might change the texture of the tomatoes -- once thawed, they may end up mushy. I'd recommend freezing a cooked salsa instead.

You can, but it'll end up watery and mushy. You might turn it into a pureed salsa, or cook it, or do something else with the tomatoes.

You can oven dry them if you want to preserve them.

You could also do a bunch of different pastas, panzella, caprese with bocconcini, etc.

Thanks! I was afraid of that. I'll look for some salsa recipes, then. My son loves home-made salsa, so I'm thinking of making a bunch again this summer.
