Apostrophes indicate a missing letter, so "betcha," "gonna," and "jist" receive no apostrophe. "Jist" doesn't even count as a slang or colloquial word. At best, it's dialect. "Betcha" and "gonna" really aren't words, either, except in the most informal and colloqial instances, but nothing in missing, so no apostrohe. "Whuppin" is also extremely informal, but receives an apostrophe because the final jee is missing. I don't know what "smakin" is supposed to be. "Smacking," maybe?
"Fixin" also gets an apostrophe because the jee is missing.
