Snipe or Woodcock - Burgundy
Quail - Champagne
Rabbit - Claret or Burgundy
Wild Duck - Burgundy or Champagne (dry)
Beef - Claret
Lamb - Claret or Burgundy
Veal - a light Burgundy or white Rhine wine
Pork - (ham) Champagne

Champagne - between 12-20 years
Burgundies - between 9-12 years
Bordeaux - between 10-16 years
